Τhe Hermit Red Wild Yeasts / Low Intervention / Unfiltered

A bold, ``wild`` and unfiltered low-intervention red.

Variety Composition:
Liatiko 40%, Vradiano 40%, Syrah 20%.

Region / Location / Vineyard:
Viticultural zone of Evia. 5-hectare vineyard in the village of Kathenoi at the foot of Mount Dirfys

Vinification Method/Maturation:
Pre-fermentation cryo-extraction and long fermentation with native yeasts at a controlled temperature.

Periodic micro-oxygenation in stainless tanks for 24 months.

Tasting Characteristics:
Its color is medium ruby. The nose is dominated by black fruits such as blackberry, blueberry and plum, with hints of leather in the background.

In the mouth it is elegant, with the fruity elements coming to the fore and the tannins being velvety.

Harmony:
Combine it with lamb stewed with herbs, duck fillet with red fruit sauce, veal in wine.

Serving temperature: 16°C.
