Orivatis Pinot Noir

A ``fresh`` red, a fine variety ideally adapted to the Greek climate.

Variety Composition:
Pinot Noir 100%

Region / Location / Vineyard:
Aigialia viticulture zone in Peloponnese. The vineyard (15 years old) is situated at an altitude of 640-700m.

Vinification Method/Maturation:
Destemming, no crushing, cold soak – skin contact under controlled conditions, alcoholic fermentation at gradual increasing temperatures, delestage, maintenance of wine “sur lies” for 4 months with regular stirring. Maturation for at least 4 months in the cellar.

Tasting Characteristics:
Bright ruby color in the glass with purple hues. Cool aromas of red fruit with plum and cherry like you just cut it. Strawberry in more jammy form, blackcurrant and raspberry complement the fruity side of its character. From now on, light animal hints of bacon and leather, graphite and hints of liquorice complete the beautiful bouquet.

Moderate volume body, as cool as the nose, with subtle fruity flavors being supported by soft tannins and balanced acidity. Cherry, strawberry and blackcurrant are in the lead, with liquorice complementing the pleasant and easy-set. The long lasting fruity aftertaste leaves the cherry in the mouth for quite a while.

Harmony:
Enjoy it on its own as an aperitif, pair with pasta with light red sauces, salmon burger, grilled red meat or a juicy moussaka.

Best served at 15ο C (59ο F).
