Orivatis Wild Yeast / Unfiltered

The old Savvatiano vines give a special wine that is fermented with wild yeasts and bottled unfiltered, thus maintaining all the formality of the Greek variety.

Variety Composition:
Savatiano 100%.

Region / Location / Vineyard:
Plataea viticulture zone in Central Greece.

Old vineyard (40 to 60 years old) situated at an altitude of 280-380m.

Vinification Method/Maturation:
Destemming, no crushing, cold soak – skin contact under controlled conditions, spontaneous alcoholic fermentation at gradual increasing temperatures. Maintenance of wine “sur lies” for 18 months with regular stirring. Post maceration in the cellar for 4 months.

Tasting Characteristics:
On the nose, ripe peach and banana are combined with quince, Turkish delight and icing sugar. Vanilla and feel of cream and biscuit complete the particular aromatic profile. Medium volume body, intense, dry, with perfectly balanced acidity. Pepper, ginger and mint complement the quince, peach and grapefruit
and all together lead to the good length, spicy aftertaste

Harmony:
Excellently married with green salads, baked vegetables, pasta, low fat fishes and a wide variety of Greek sea food “Meze”.

Best served at 11ο C (51,8ο F).
