Orivatis Old Vine Savatiano

Savatiano 100%

Region / Location / Vineyard:
Evia viticulture zone in Central Greece.
Old vineyard (40 to 60 years old) situated at an altitude of 280-380m.

Vinification Method/Maturation:
Destemming, no crushing, cold soak – skin contact under controlled conditions, alcoholic fermentation at gradual increasing temperatures. Μaintenance of wine “sur lies” for 3 months with regular stirring.

Tasting Characteristics:
Pale lemon color and expressive nose, with aromas of lemon, citron, grapefruit, lime, unripe apricot, green apple, and lemon blossoms.

In the mouth, it has a medium body, medium (+) acidity, and an oily feeling.

Peach, bitter orange, apple, lemon, lemon verbena, citron, and grapefruit flood the palate in every sip.

Harmony:
Excellently married with green salads, baked vegetables, pasta, low fat fishes and a wide variety of Greek sea food “Meze”.

Best served at 11 οC (51,8 οF).
